Good morning, friends, I hope you are having a nice week so far! Today I am popping in with a really easy and mighty delicious recipe. I call these Healthy Dark Chocolate Bites because even though they are made from chocolate they are full of healthy ingredients too, like sunflower and pumpkin seeds. And, when you use dark chocolate you can rest assured you’re getting a healthy dose of antioxidants and health benefits along with it. It’s a win-win!
Nick first made this recipe a few weeks ago after we had been snacking on something similar we picked up at the grocery store. He figured they would be pretty easy to make ourselves and gave it a shot. They turned out even better than the store-bought variety, in my opinion. They are sweet with a bit of a crunch…the perfect combination. But these little chocolate bites are seriously addictive, so if you decide to try out this recipe, I guarantee you won’t be able to put them down. 😉
They are a great little snack to make ahead of time and keep on hand, I’ve been sneaking into the pantry all week to snack on a few of these every day. And I know these will become a staple in our house whenever a chocolate craving kicks in.

Healthy Dark Chocolate Bites
Healthy dark chocolate bites made with dark chocolate, sunflower seeds, pumpkin seeds and coconut are a perfectly satisfying and healthy snack.
Ingredients
- 300g dark chocolate bars (at least 60% cocoa)
- 1 cup pumpkin seeds, raw and unsalted
- 1 cup sunflower seeds, raw and unsalted
- 1 1/4 cup unsweetened ground coconut (you can also use coconut flakes)
- 1 tsp sea salt
Instructions
- Break up chocolate bars into smaller pieces and place in a pyrex bowl (heat-safe bowl).
- Fill a medium saucepan about 1/3 full of water and place over medium-high heat.
- Rest the Pryex bowl over the top, creating a double boiler.
- Once the water in the saucepan has started boiling, lower it to a simmer.
- Stir the chocolate pieces constantly until the last of the chocolate has just melted. Do not boil the chocolate as the fats will separate from the cocoa.
- Remove from heat and stir in the dry ingredients.
- Line a large baking sheet with wax paper and spread the mixture out over it, creating small chunks. Don't worry if they don't all end up separated, you can break them up like a bark once they have hardened.
- Allow to cool and harden overnight.
